Morning Tea: Green Juice and 500 ml water

Lunch: Watercress Soup and 100 g of protein (tofu, turkey or chicken)

Afternoon Tea: a handful of nuts and 500 ml water

Dinner: Pumpkin and Tofu Curry

The Recipes
Stewed Fruit: chop and boil 2 pears and 2 apples. Leave the skin on. Once cooked, drain water and mash. sprinkle a little cinnamon on top

Lemon water is just boiled water with 1/4 cup of fresh lemon juice. It’s best to have this before eating anything.

Green Juice
If you don’t have a juicer, you might want to buy a fresh juice or substitute with a piece of fruit. You can experiment here so long as its green! Great combos are kale, cucumber and apple; spinach, mint and apple

Watercress Soup
1 bunch of watercress
1 potato
1 onion
1 litre of vegetable stock

Finely chop the onion and dice the potato and boil in the stock until cooked.
Wash the watercress and remove stems, chop finely.
Add the cress to the stock soup, turn the heat down and simmer until the cress is wilted.
Blend the soup, add a little salt and pepper and lemon juice. Voila!

Pumpkin and Tofu Curry
1/2 a butternut pumpkin
300 g firm tofu
3 cups of rocket, spinach or kale
Lemon juice
Olive oil
Curry Powder
Coriander

Heat oven full blast (250 degrees)

Chop pumpkin and tofu into cubes and pour into an oven proof dish

In a separate bowl whisk half a cup of olive oil and a tablespoon of curry powder

Stir marinade through the pumpkin and tofu (the tofu will crumble at this point, but not to worry)

Bake for 45 mins to 1 hour or until pumpkin is cooked through

Remove from the oven and stir in your chosen green vegetable, 1/4 cup of lemon juice and coriander

Serves 2- 4 people

5 Tips To Not Over Do Easter

Hi Friends,

Is it possible to not be a total killjoy over the holidays if you’re on a health kick? Absolutely! Whether or not you want to avoid it all together or indulge a little, here are 5 quick tips to keep you on your path:

1. Be straight up with people. Simply say, “I can’t eat that stuff, no matter how good it tastes. Sugar and gluten are not in my diet and if I eat that Easter egg or hot cross bun I might have a strong reaction.”

2. Set limits. If you want some chocolate, have some, just not too much. Buy only half a dozen hot cross buns to share. If you don’t have it at home, don’t eat it.

3. Surrender. If the pressure is too great, enjoy without guilt and know that you can start again on your health plan on Monday .

4. Pre plan. Think about the next few days; where will you be going and what will you be eating? If you’re organised, you’re less likely to over eat and get stressed.

5. Enjoy. Remember Easter only comes once a year and not only is it a spiritual time, but an opportunity to spend time with family and friends.

Happy Easter!

The Eloquence of the Green Smoothie

Hi Friends,

I need to share with y’all my love of the green smoothie and what an amazing companion it can be on your journey into inner peace and harmony! Okay, so it may look like it came out of the swamp- but you will find yourself proclaiming “Wow! Wham! Kapow!” and all manner of mighty statements after you’ve sipped this tonic of “super foods” so rich in nutrients and anti oxidants it will keep your motor running all the way to lunch time…

So here’s what went in the blender this morning- kale, lettuce, cucumber, kiwi fruit, 2 cups of coconut water, 3 cups of water, 1 tsp spirulina, 1 tsp flaxseed, 1 tsp wheatgerm, 1 tsp chia seeds; and skull it if you don’t like the taste!

Oh Green smoothie, you are beautiful no matter what they say (thanks Christina Aguilera, I love you too)…anybody with me on this kick butt way to start your day?
